Yes. I am fully aware of how awesomely delicious that sounds. And... that hardly any of these pictures are clear :/ sorry, the lighting wasn't that great in my house...
Firstly... You must murder the zucchini. No, you don't have to do that first... But it is easier to just shove it in there when you need to :P |
Secondly... You must melt your butter until it screams. Just kidding. Just melt it :P |
Then, beat 4 eggs |
Grab your can of pumpkin.... |
And shove it in your mixing bowl. (you can use a whisk and and a normal, big bowl if you don't have a kitchen aid) |
Mix... Mix... Mix... |
Then, add you vanilla. |
And pumpkin pie spices |
Mix... Mix... Mix... |
Add milk.... and the mix some more. |
Then get your flour... and pumpkin pie spices in a different bowl, and gradually mix it. |
Fold in zucchini shreds and Chocolate chips... |
Put into 2 greased bread pans... and bake. |
Now, I am giving you all the recipe calculations cause I'm nice :P
Pumpkin Zucchini Chocolate Bread {Makes 2 loaves}
Preheat oven to 350 degrees Fahrenheit
4 eggs, beaten
1 1/2 cups white sugar
1 cup melted butter
2 TBS vanilla extract
**mix well**
Add 1 cup of milk
**mix together**
5 cups all purpose flour
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1TBS ground Cinnamon
1TBS ground nutmeg
1TBS ground cloves
**add slowly into wet ingredients**
2 cups shredded zucchini
1 cup chocolate chips
**optional** 1 cup crushed pecans or walnuts
**Fold in**
Pour mixture into 2 greased bread pan. Put into preheated oven for 45 minute OR until a tooth pick come out of the middle clean. Place onto a wire rack until cool enough to cut :)
Now, bask in its awesome taste! ;)

my favorite thing to make during this time of year, is pumpkin cupcakes! anything pumpkin really is fantastic during autumn!
